Another simple and tasty supper idea using seasonal, Cornish produce.
Pick four of our Organic white onions.
Slice or chop.
Melt a knob of slightly salted Cornish butter in a heavy pan.
Stir the onions so well covered in the melted butter, then on a very low heat, sweat the onions.
The onions should be soft and translucent.
Add a small bottle or can of Cornish cider to the onions.
We used a scrumptious Cornish Orchards Vintage Cider (we bought two bottles but don’t know what happened to the other one!).
Boil until the liquid has reduced by half.
Add one and a half pints of chicken or vegetable stock, salt, pepper, a pinch of thyme and a bay leaf.
Simmer for about twenty minutes until the liquid reduces again. Remove the bay leaf and leave to cool a little.
Wizz in the blender and then bring to the boil.
This soup really should have some generous hunks of Cornish cheese crumbled on top to round it off. We use Davidstow cheddar as it is the perfect taste and texture.
Serve and enjoy as the cheese starts to melt a little… mmm… Great with a slice of our home baked bread.
