No better soup (in our opinion) to kick start your New Year detox. In season, delicious and full of goodness. Here is our recipe using our Organic Vegetables.
Start off by melting a knob of Cornish, salted butter – we used a heavy based pan, but it’s not necessary.
Don’t let it burn!
We use a couple of our Organic White Onions.
Peel and roughly chop.
Very gently, we use the lowest heat, sweat the onions in the butter. Add a couple of teaspoons of Fair Trade sugar, you could use white or brown.
Whilst the onions are sweating, we selected four of our good sized Organic Beetroot.
Peel and roughly chop the beetroot – this can get a little messy, don’t worry it washes away!
When the onions have softened and are translucent, add the beetroot.
Add one pint of beef stock to the pan, we use our own Organic Beef stock.
Bring to the boil and simmer without a lid gently, until the beetroot is soft and the liquid has reduced slightly.
Season to taste, leave to cool a little, then blitz with a blender until smooth. You can experiment with varying the quantities and seasoning until you get the perfect taste and consistency you like.
Add a swirl of Cornish double cream if you are feeling a bit naughty, serve and enjoy!
