Brilliant Borsch

No better soup (in our opinion) to kick start your New Year detox. In season, delicious and full of goodness. Here is our recipe using our Organic Vegetables.

We use a couple of our Organic White Onions.

Very gently, we use the lowest heat, sweat the onions in the butter.

When the onions have softened and are translucent, add the beetroot.

Add one pint of beef stock to the pan, we use our own Organic Beef stock.

Simmer

Bring to the boil and simmer without a lid gently, until the beetroot is soft and the liquid has reduced slightly.

Leave to cool a little, then blitz with a blender until smooth.

Add a swirl of double cream if you are feeling a bit naughty, serve and enjoy!
