In praise of the Parsnip

Our Organic Parsnips are in season and we have a great harvest. Deliciously sweet, they are full of vitamins and minerals, including antioxidants and are an incredibly versatile vegetable. Of course, this time of year, they are a perfect trimming to the traditional meal (we like to roast them drizzled in local Organic honey), but there are many other ways we will be enjoying this understated root.

If you have the dreaded winter cold, a warming bowl of hearty, spiced parsnip soup will chase away those bugs and tempt the taste buds. If you are watching your waistline, then replacing some of your mashed potato with parsnip is an instant calorie reduction. We like to use this combination when making a cottage or shepherds pie, with our Organic Beef and Lamb. If you are watching the pennies after the seasonal splurge, then a cut of our Organic Beef chuck or skirt steak, parsnips, carrots and onions, all left to melt together overnight in a slow cooker with herbs and seasoning, is a perfect filling dish for all.
